By the way, America's Test Kitchen has an interesting twist on frying french fries. They start with sliced potatoes in COLD oil! They use Yukon gold potatoes. Bringing the potatoes and the oil to a boil gets rid of the water in the poatotes. Looks painfully simple. my favorite food blog: homesicktexan
